Slow Cooker BIG POT of Baked Beans

A few months ago I was put in charge of the food at a church event and I really wanted to do a different menu then the standard “cold hamburgers” and “colder hot dogs” To be honest, I think the members of my church were a little sick of that menu.

So… I offered to cook the food with the stipulation that I got to pick the menu.

I pulled out all my slow cookers and borrowed a few from other ladies at church and decided on a menu of pulled pork sandwiches, baked beans and then I picked up some classic potato salad and macaroni salad from Costco.

The menu was a hit and everyone kept asking me for the recipe for these baked beans.

Little did they know how easy the beans were to make. The hardest part was frying up the bacon and chopping up the onion. I did that all way ahead of time and then tossed everything in the slow cooker and let it do it’s thing.

The beans are perfect, with all the right flavors and nothing too spicy. Your friends and family will be asking you too for the recipe!

Can You Double This Recipe?

This recipe serves 15 generous portions already but if you have a very large slow cooker (7 quart or larger) you can double the recipe. You will need to increase the cooking time by an extra hour or two to make sure the raw onions get cooked.

If you have leftover baked beans or just want to make a big batch of beans and freeze them in smaller portions for meals you can easily do so. To freeze, let the beans cool to about room temperature and then spoon the beans into food safe freezer bags or containers. Label the beans with the contents and date frozen and stash them away in your freezer for up to 1 year. I just dump the frozen beans in a pot on the stove-top and heat them up over low heat. But you can also microwave them.

  • In a skillet on the stove-top cook the bacon until crispy, drain of paper towels and then chop bacon into bite sized pieces.

  • Add chopped bacon and all remaining ingredients to a 6 quart or larger slow cooker and stir to combine.

  • Cover and cook on LOW for 4 to 6 hours.

Notes

If after several hours of cooking the beans seem a little too soupy, you can prop the lid of the slow cooker open a little bit with the handle of a wooden spoon to allow some of the excess liquid to evaporate.
