I have always loved cauliflower. I usually make it roasted, because raosted vegetables are my favorite. I cold eat them every day. When I decided I wanted to cut some of the carbs I was eating and enjoy more vegetables, I started looking for more cauliflower recipes. Some of my favorite cauliflower recipes have been riced cauliflower, mashed cauliflower, and my favorite, a Loaded Cauliflower Bake.

What is a Loaded Cauliflower Bake?

You might have head of a loaded baked potato or loaded mashed potatoes. These are potatoes that are made using lots of cheese, bacon and usually chives. All kinds of yumminess. It is the same concept with this loaded cauliflower bake. This is a cauliflower au gratin. The cauliflower is steamed, mixed with things like heavy cream, cream cheese and shredded cheese and baked so it all comes together to perfection.

Even for someone who thinks they do not like cauliflower, like my husband, a loaded cauliflower casserole can change their minds. Most people don’t think they like cauliflower because it doesn’t have a strong taste and it can seem bland. The fact that cauliflower doesn’t have a strong taste is exactly what makes it a great choice for a dish like this. When you are trying to eat low carb, cauliflower can be your best friend. It can be made to have a similar texture to potatoes and even rice and when turned into a loaded cauliflower casserole this will taste like you are eating something you shouldn’t.

Loaded Cauliflower Au Gratin

Prep time: 10 minutes
Cook time: 15-20 minutes
Serves: 6

Weight watcher Points 4
Ingredients:
4 c. cauliflower florets, chopped into bite-sized pieces
6 oz. cream cheese, cut into chunks (for WW ints, use fat free cream cheese)
¼ c. heavy cream (for WW Points use 2% milk)
3 T. unsalted butter, softened
¼ t. garlic powder
½ t. dried dill
Sea salt and black pepper, to taste
1½ c. Italian cheese blend, shredded (WW use Fat Free Cheese)
4 strips bacon, cooked and crumbled (For WW points use center cut, reduced fat)
1 T. fresh chives, chopped

Directions:
1. Place top oven rack in the center position and preheat oven to 400°F.

2. Place the cauliflower in a steamer basket like this one to cook in the microwave or in a steamer basket on top of a pot with boiling water and steam until fork-tender, around 6-7 minutes. If you do not have a steamer basket, you can boil the cauliflower for about 5 minutes. Remove from heat and transfer cauliflower into a cold water bath to prevent further cooking. Drain well and pat dry.

3. Transfer steamed cauliflower to a large bowl and add cream cheese, heavy cream, butter, garlic powder, and dried dill. Season with salt and black pepper, to taste, and toss to combine.

4. Transfer to oven-safe casserole dish and top with shredded cheese blend and crumbled bacon. Place in pre-heated oven and roast until cheese is melted and nicely browned on top, around 8-10 minutes.

5. Remove from oven and serve immediately topped with fresh chives. Enjoy!
